Anthocyanins - what are they?

These phytochemicals are among the water-soluble plant pigments and are therefore mainly found in fruits, where they give them a red, violet or, in the case of blueberries, blue color. They can also be found, for example, in cherries, blue grapes, acai berries, red cabbage and Aronia berries.

Anthocyanins also belong to the group of flavonoids, which in turn belong to the polyphenols.
